Huacatay is an aromatic herb that grows in the three regions of Peru – Coast, Sierra and Jungle – as well as in the high valleys of Bolivia and Ecuador or in the inter-Andean valleys. Its scientific name is Tagetes minuta, it is also known as “andean mint” and is very difficult to find outside that area. It is often confused with Mexican epazote, although they are not the same (the name of the latter is Dysphania ambrosioides).
Its presence in Peruvian gastronomy dates back to ancient times, when it was used in everything from stews and soups to sauces and dressings. It’s a key ingredient in famous and emblematic dishes such as ají de gallina or traditional pachamanca. In Peruvian culture, huacatay is attributed with mystical properties such as chasing away evil spirits and attracting good luck.
Its aroma is defined as a mix of basil, lemon, mint and tarragon, which makes for a perfect spice mixture for white fish with its perfect acidic hint.
